When you’re craving something delicious but don’t have much appetite, this squid rice bowl is perfect to whip up quickly! Today, I’ll introduce a ‘Super Simple Squid Rice Bowl’ recipe that you can make in a flash using only your microwave, without any need for a stovetop. It’s so easy that even solo dwellers or cooking beginners can follow along perfectly.
Main Ingredients- 1 Squid (medium size)
- 2 Green tea bags
- 1 Onion (medium size)
- 3-4 Perilla leaves
- 1 Cheongyang pepper (Korean chili pepper)
- 1 Red chili pepper
- Cooked rice (as needed)
Seasoning Ingredients- 1 Tbsp Gochujang (Korean chili paste)
- 1/2 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Soy sauce
- 1 Tbsp Oligodang (corn syrup)
- 1 Tbsp Sugar
- 1/2 Tbsp Minced garlic
- 1/2 Tbsp Sesame oil
- A pinch of Black pepper
- 1 Tbsp Gochujang (Korean chili paste)
- 1/2 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Soy sauce
- 1 Tbsp Oligodang (corn syrup)
- 1 Tbsp Sugar
- 1/2 Tbsp Minced garlic
- 1/2 Tbsp Sesame oil
- A pinch of Black pepper
Cooking Instructions
Step 1
First, clean and prepare the squid, then cut it into bite-sized pieces (about 1-2 cm wide). Thinly slice the onion, and roll and thinly slice the perilla leaves. Finely chop the Cheongyang pepper and red chili pepper after removing the seeds. (Feel free to add other vegetables you like, such as carrots or mushrooms.)
Step 2
To effectively remove any fishy smell from the squid, soak the cut squid in water steeped with 2 green tea bags for about 5 minutes. This method, featured on ‘Manmulsang’ (a Korean TV program), is a proven way to eliminate unpleasant odors and will leave your squid smelling clean.
Step 3
While the squid is soaking, prepare a deep, microwave-safe bowl. Add all the seasoning ingredients: gochujang, gochugaru, soy sauce, oligodang, sugar, minced garlic, sesame oil, and black pepper. Mix them thoroughly until well combined to create the sauce.
Step 4
Drain the squid from the green tea water using a sieve. Add the drained squid to the bowl with the prepared sauce. Toss in the sliced onion, perilla leaves, chili peppers, and any other chosen vegetables. Gently mix everything together until the sauce evenly coats the squid and vegetables. (At this stage, also add any extra vegetables you’ve prepared.)
Step 5
Place the bowl with the sauced squid and vegetables into the microwave. Cook for 2 minutes initially. After 2 minutes, take it out, stir well with a spoon, and then microwave for another 2 minutes, or until cooked through, keeping an eye on its progress. It’s important to stir and check periodically rather than cooking it all at once from the start, to ensure it cooks evenly and doesn’t burn.
Step 6
When you take the squid out of the microwave, there might be quite a bit of liquid released from the vegetables. You can mix this directly with rice and enjoy it as is. However, if you prefer a thicker, richer sauce for your rice bowl, proceed to the next step.
Step 7
Immediately after removing it from the microwave while it’s still hot, add about 1/2 tablespoon of cornstarch and stir quickly. The cornstarch will quickly thicken the sauce as it interacts with the heat. Now, fill a bowl with warm cooked rice, generously spoon the prepared spicy and sweet squid mixture over the top, and your fantastic squid rice bowl is complete!
