Whip up a delicious dish with potatoes and bacon from your fridge! This addictive Bacon and Potato Stir-fry will have you reaching for seconds. It’s simple yet incredibly flavorful, making it a perfect everyday side dish.
Main Ingredients- 3 medium potatoes
- 3-4 strips of thick-cut bacon (adjust to taste)
- 2 pinches of salt
- 3 Tbsp cooking oil
Cooking Instructions
Step 1
These new season potatoes are incredibly sweet and delicious! First, peel the potatoes thoroughly.
Step 2
Using a mandoline slicer or a knife, cut the peeled potatoes into thin, uniform matchsticks. Cutting them thinly will result in a better texture when stir-fried.
Step 3
Place the julienned potatoes in a bowl of cold water for about 10 minutes to rinse off excess starch. This step prevents the potatoes from sticking together and ensures a cleaner stir-fry.
Step 4
Cut the bacon into strips that are roughly the same length as the potato matchsticks. Using thick-cut bacon will enhance the overall flavor.
Step 5
Heat 3 tablespoons of cooking oil in a pan over medium heat. Once the oil is shimmering, add the drained potato matchsticks and sprinkle with 2 pinches of salt. Stir-fry the potatoes until they become slightly translucent.
Step 6
When the potatoes are about halfway cooked, add the cut bacon to the pan and continue to stir-fry together. It’s crucial to stir frequently with a spatula to prevent the potatoes from sticking to the bottom of the pan. Keep stir-frying until the potatoes are golden brown and the bacon is crispy – then it’s ready!

I often make a generous batch, store it in the refrigerator, and reheat small portions in the microwave when I want some, and it tastes just as good.
