  • Well-fermented Kimchi, about 1 handful (approx. 150g)
  • Warm Cooked Rice, 1 bowl (approx. 200g)
  • White Parts of Green Onion, 1-2 stalks
  • Cooking Oil, 2 Tbsp

Seasoning

  • Sugar, 1/2 Tbsp
  • Soy Sauce, 1 Tbsp
  • Gochugaru (Korean Chili Flakes), 1 Tbsp
  • Sesame Oil, 1/2 Tbsp

Cooking Instructions

Step 1

Finely chop the kimchi into bite-sized pieces. While you can use a cutting board and knife, it’s much easier and neater to place the kimchi in a bowl and cut it with scissors.

Use the white parts of the green onion, as they add great flavor to the dish. Wash them thoroughly under running water and mince them finely. Minced green onion is perfect for making aromatic green onion oil.

Heat 2 tablespoons of cooking oil in a pan over low heat. Add the minced green onion and sauté slowly. It’s crucial to cook until the green onion becomes fragrant and starts to turn a light brown color, without burning it. This process creates delicious green onion oil.

Just before the green onion turns golden brown, add the chopped kimchi to the pan and stir-fry together. Make sure to cook until the kimchi’s moisture has sufficiently evaporated.

Once the kimchi has cooked down and much of its moisture has evaporated, add 1/2 tablespoon of sugar. Stir well to incorporate. Sugar balances the sourness and enhances the overall savory flavor.

Push the sautéed ingredients to one side of the pan. Pour 1 tablespoon of soy sauce into the empty space. Let the soy sauce sizzle and slightly caramelize against the hot pan for a moment, then mix it with the other ingredients and stir-fry. This adds a deeper, richer umami flavor.

Now, add 1 tablespoon of gochugaru (Korean chili flakes) for that signature spicy kick. Stir-fry everything together so the ingredients are well combined. Ensure the kimchi and seasonings are evenly distributed.

Finally, add 1 bowl of warm cooked rice and mix it in. While cold rice works, using slightly warmed or room-temperature rice will result in a softer texture. You can turn off the heat temporarily at this stage! Use a spatula to gently break up any clumps of rice and mix everything thoroughly.

Once the rice and kimchi mixture are well combined, turn the heat back on to medium-high or high. Stir-fry quickly, ensuring each grain of rice is coated with the flavorful mixture.
