Japchae, a dish essential for feasts and birthdays! If you’ve always thought it was too difficult, think again. This recipe makes super simple Japchae achievable for anyone with just an all-purpose soy sauce. Perfect for holidays, special occasions, or when you’re craving Japchae suddenly. Whip up a wonderful meal with this easy recipe!
Ingredients- 1 cup pre-cut glass noodles
- 1/2 cup all-purpose soy sauce
- 1 cup chives
- 1 cup green onions
- 1 cup onion
- 2 cups colorful bell peppers
Cooking Instructions
Step 1
First, boil the glass noodles in plenty of boiling water. I used pre-cut glass noodles, measured to fill one paper cup. (The best method is to soak the noodles in water for about an hour beforehand! However, if you’re short on time or suddenly crave Japchae, it’s perfectly fine to use them without soaking.)
Step 2
Once the glass noodles are well-cooked, rinse them thoroughly under cold water to remove any residue, and drain them very well. It’s crucial to squeeze out as much water as possible, as excess moisture can make the Japchae soggy.
Step 3
Now, heat a wok or a deep pan. Add the 1/2 cup of all-purpose soy sauce you prepared earlier, and immediately add the drained glass noodles.
Step 4
Stir-fry over high heat until the glass noodles are evenly coated with the soy sauce and the liquid has reduced. Continue cooking until all the moisture is gone and the sauce has thickened.
Step 5
Once the glass noodles have absorbed the sauce and most of the moisture has evaporated, add the sliced onion and green onions. Cooking over high heat at this stage will help maintain the crisp texture of the vegetables.
Step 6
When the onion and green onions become slightly softened and translucent, turn off the heat. Be careful not to overcook them, as this will diminish their crispness.
Step 7
With the heat turned off, add the remaining prepared vegetables: chives and colorful bell peppers. Adding them off the heat helps preserve their fresh flavor and crunchy texture. (If you’re adding mushrooms or other crunchy vegetables, this is the time to include them.)
Step 8
Gently toss everything together until well combined. Finally, drizzle a circle of sesame oil for a rich, nutty aroma, and sprinkle sesame seeds generously for a delicious finish. Your super simple Japchae is ready!
