Main Ingredients

  • 4 servings of glass noodles (approx. 200g)
  • 1 medium onion
  • 1/2 carrot
  • 10cm green onion
  • 1 handful of pork for stir-fry (approx. 100g)

Pork Marinade

  • 2 Tbsp soy sauce
  • 1 Tbsp sesame oil
  • 1/2 Tbsp corn syrup (oligo당)
  • 1 Tbsp sugar

Noodle Seasoning

  • 6 Tbsp soy sauce
  • 4 Tbsp sesame oil
  • 1/2 Tbsp sugar
  • 1 Tbsp corn syrup (oligo당)
  • 1 Tbsp sesame seeds (for garnish)

Cooking Instructions

Step 1

Pat the pork for stir-fry dry with paper towels to remove excess blood. Then, in a bowl, mix the pork with 2 Tbsp soy sauce, 1 Tbsp sesame oil, 1/2 Tbsp corn syrup, and 1 Tbsp sugar. Gently knead the mixture and let it marinate for about 10 minutes. This pre-marinating step makes the pork tender and flavorful.

Slice the onion into thin strips. Slice the carrot thinly. Cut the green onion into 5cm lengths on a bias. Slicing the vegetables to a similar thickness ensures they cook evenly.

Heat 1 Tbsp of cooking oil in a wok or pan over medium-high heat. Add the marinated pork and stir-fry, breaking it apart with chopsticks until cooked through. Transfer the cooked pork to a separate plate. Add a little more oil to the same pan. Stir-fry the sliced carrots until slightly softened, then add the sliced onions and green onions. Stir-fry quickly over high heat to maintain their crispness. Be careful not to burn the ingredients. Cooking the pork and vegetables separately allows each ingredient’s flavor and texture to shine.

Combine the cooked pork and all the stir-fried vegetables in one place and set aside briefly. This makes it easier to mix with the noodles in the next step.

Bring a large pot of water to a boil. Add the glass noodles and cook for about 8-10 minutes, or until tender. Test the noodles by picking one up with chopsticks to check for doneness. Avoid overcooking, as they can become mushy. Once cooked, immediately drain the noodles in a colander. Do not rinse them with cold water. Let them cool down naturally. Mixing the noodles while they are still warm but not piping hot helps them absorb the seasoning better and maintain a chewy texture.

In a large mixing bowl, combine the cooled, cooked glass noodles with the stir-fried pork and vegetables. Add the noodle seasoning ingredients: 6 Tbsp soy sauce, 4 Tbsp sesame oil, 1/2 Tbsp sugar, and 1 Tbsp corn syrup. Gently mix everything together using chopsticks or a spatula. It’s best to add the seasoning gradually, tasting as you go, and adjusting to your preference. Mix gently to prevent the noodles from clumping.
