Main Ingredients- Leftover beef (for soup or stew) – appropriate amount
- Onions – 2 large
- Red onion – 1
- Potatoes – 7 (adjust to your preference)
- Chili peppers – 3 (adjust for spiciness)
Seasoning- Soy sauce – 2 Tbsp
- Gochujang (Korean chili paste) – 2 Tbsp
- Gochugaru (Korean chili flakes) – 3 Tbsp
- Black pepper – 1 pinch
- Minced garlic – 1 Tbsp
- Brown sugar – 1 Tbsp
- Oligosaccharide (or corn syrup) – 2 Tbsp
- Water – 1/2 paper cup (approx. 100ml)
- Soy sauce – 2 Tbsp
- Gochujang (Korean chili paste) – 2 Tbsp
- Gochugaru (Korean chili flakes) – 3 Tbsp

Cooking Instructions
Step 1
First, let’s prepare the star of the dish: the potatoes. The number of potatoes you use is entirely up to your preference. Feel free to use any leftover potatoes you have in your fridge.

Cut the potatoes into bite-sized cubes. Personally, I find this size perfect for a good mouthful. Cutting them smaller allows the flavors to meld better. Once cut, soak the potatoes in cold water to remove some of the starch. This step helps prevent the stew from boiling over or becoming cloudy.

Now, let’s prepare the delicious gochujang sauce that will bring this dish to life. The recipe includes 1/2 cup of water, but you can adjust this amount. I tend to add a little water initially to mellow out the strong flavors, making it more approachable from the start. Feel free to adjust this to your taste!

Don’t worry if you don’t have green onions! My recipe emphasizes using what you have on hand. If you love onions, add both regular and red onions generously. The sweetness and aroma of the onions will greatly enhance the flavor of the braised potatoes.

Apologies, I missed taking a photo of the potatoes boiling! After rinsing the potatoes, place them in a pot and add enough water to cover them. Bring to a boil over medium heat. Once the potatoes are about half-cooked, reduce the heat to low and add the prepared vegetables (onions) and stir-fried beef. The order of heat levels should be: high → medium → low.
Step 7
Start by adding only half of the prepared gochujang sauce and let it simmer. The beef will surprisingly release a flavorful broth that adds depth to the dish. Taste and add the remaining sauce if needed.
