  • 1 Slice of Butter
  • 1 Packet of Commercial Hay-Rice Mix
  • 1 Block of Curry Roux (Optional)
  • 3 Cups Water (approx. 600ml)
  • 3 Tbsp Milk
  • 1 Tbsp Honey
  • 2 Tbsp Ketchup

Cooking Instructions

To prepare the broccoli, which can sometimes have pesticide residue, wash it thoroughly multiple times under running water. For extra peace of mind, soak it briefly in water with a splash of vinegar before use. Cut the broccoli into bite-sized florets.

Season the pork loin, which has been cut into generous pieces, by gently massaging it with black pepper and 1 tablespoon of mirin (or cooking sake). Letting it marinate for a bit will help tenderize the meat and remove any unwanted odors.

Dice the onions into large cubes. Similarly, chop the carrot into bite-sized cubes. Slice the green onion finely. (Note: While not in the original recipe, if you have potatoes at home, dicing them similarly and adding them will make the dish even richer and more delicious. However, it’s perfectly fine to omit them if unavailable!)

While making Hay-Rice from scratch with demi-glace sauce is traditional, today we’ll be using a convenient store-bought Hay-Rice mix to save time. This method is quick yet yields a delicious result, so follow along with ease.

Melt a slice of butter in a pan over medium-low heat. Add the sliced green onions and onions, along with 1 tablespoon of minced garlic. Sauté until the onions become translucent and fragrant. This step is crucial for developing a sweet flavor base.

As the mixture comes to a boil, add the commercial Hay-Rice mix. Stir well to dissolve it completely, ensuring there are no clumps. While it can be pre-dissolved in a little water for a smoother consistency, it usually dissolves well directly into the broth.

For an even deeper and richer flavor profile, we’re adding one block of curry roux. Even those who aren’t big fans of curry might enjoy this blend with Hay-Rice. (You can also use curry powder if you have it.)

Once all ingredients are combined, reduce the heat to low and let it simmer gently until the vegetables are tender and the sauce has thickened slightly, about 15-20 minutes. Stir occasionally to prevent sticking to the bottom of the pot.
