Traditional sujebi involves the hassle of kneading and resting the dough. However, this recipe simplifies the process by creating a thin batter that you can simply spoon directly into the pot! Infused with gochujang, this sujebi offers a rich and subtly spicy flavor, making it perfect for beginners and a satisfying meal for anyone. Enjoy this easy and delicious Korean dumpling soup!
Basic Ingredients- 500ml Broth (anchovy-kelp broth or store-bought)
- 1 small Potato
- 1/4 Zucchini
- Small amount of Green Onion
- Small amount of Man-i-darak Mushroom (optional)
Super Simple Sujebi Batter- 80g All-purpose Flour
- 90ml Water (or broth)
- 1/3 Tbsp Gochujang (Korean chili paste)

Cooking Instructions
Step 1
Prepare all your ingredients. Wash and peel the potato and zucchini, then slice them into half-moons. Trim the base of the man-i-darak mushrooms and separate them into individual strands. Slice the green onion diagonally.
Step 2
In a bowl, place the 80g of flour. Pour in 90ml of water (or broth). Using a spoon, gently mix until just combined, ensuring no dry flour remains. Tip: If you have extra broth, feel free to use it in place of water for a richer flavor.
Step 3
Add 1/3 Tbsp of gochujang to the batter and stir until it’s completely dissolved and lump-free. The batter will be much thinner than traditional sujebi dough, designed to be easily spooned.
Step 4
Have your sliced potato, zucchini, man-i-darak mushroom, and green onion ready.

Pour 500ml of broth into a pot and bring it to a boil over high heat.
Step 6
Once the broth is boiling vigorously, add the sliced zucchini and potato. Cook until the potatoes are about halfway done.

When the vegetables are partially cooked, use a spoon to scoop dollops of the thin batter and drop them into the boiling broth. Tip: Holding the bowl in one hand and the spoon in the other, aim for consistent sizes when dropping the batter. Stir occasionally to prevent sticking.
Step 8
Once the sujebi dumplings float to the surface, indicating they are cooked, add the man-i-darak mushrooms and green onions. Simmer for another minute.

Taste the broth first. If it needs more flavor, add a splash of fish sauce for an extra layer of umami.

Finally, season with salt to your preference. (You can also add a pinch of red pepper flakes for extra spice if desired.)
