Main Ingredients- 2 cups well-fermented napa cabbage kimchi, finely chopped
- 1/4 onion, finely minced
- 1 can (approx. 5 oz or 150g) tuna in oil or water, drained
Cooking Instructions
Step 1
Prepare your ingredients: Finely chop the kimchi into bite-sized pieces. Peel and finely mince the onion. Having everything prepped will make the cooking process much smoother and faster.
Step 2
Heat the sesame oil in a pan over medium heat. Add the chopped kimchi and sauté for about 2-3 minutes until it softens and becomes fragrant, releasing its wonderful aroma. Then, add the minced onion and cook alongside the kimchi until the onion turns translucent and slightly softened.
Step 3
Once the onion is translucent, add the drained tuna to the pan. Stir and cook with the kimchi and onion for about a minute, allowing the flavors to meld. Pour in 1 cup of water to create a sauce base.
Step 4
Now, let’s build the flavor! Add the red pepper flakes, soy sauce, and sugar to the pan. Stir everything together well and continue to cook, allowing the sauce to simmer and the flavors to deepen. The sugar helps to mellow out the acidity of the kimchi and adds a touch of sweetness.
Step 5
Prepare the cornstarch slurry by mixing 1/2 tablespoon of cornstarch with 1/2 tablespoon of water in a small bowl until smooth. While the sauce is simmering, slowly drizzle in the cornstarch slurry, stirring constantly. Add just enough to reach your desired thickness; you might not need all of it. Once thickened, remove from heat.
Step 6
Serve this delicious Tuna Kimchi topping generously over a bowl of hot cooked rice. For an extra touch, consider adding a fried egg, some shredded seaweed (gim), or sesame seeds. Enjoy your incredibly easy yet satisfying Tuna Kimchi Rice Bowl!
