Main Ingredients- 2 sheets of fish cake (eomuk), cut into bite-sized pieces
- 8 frozen dumplings (mandu), choose your favorite filling
- 1 handful of rice cakes for soup (tteokguk tteok), about 100-150g, soaked briefly in cold water
- 1/4 stalk of green onion, finely chopped for garnish
Broth and Seasoning- 4-5 cups water or anchovy-kelp broth
- 1 Tbsp chicken stock (adds a savory depth)
- 4-5 cups water or anchovy-kelp broth
- 1 Tbsp chicken stock (adds a savory depth)
Cooking Instructions
Step 1
First, soak the rice cakes in cold water for about 5 minutes to soften them. Cut the fish cakes into bite-sized pieces (approximately 2x3cm). Finely chop the green onion.
Step 2
In a pot, add 4-5 cups of water or your prepared broth and bring it to a boil over high heat. Once the water is vigorously boiling, add the frozen dumplings. Cook for about 3-4 minutes, or until the dumplings float to the surface.
Step 3
As the dumplings begin to cook, stir in 1 tablespoon of chicken stock to enhance the broth’s flavor. Next, add the cut fish cakes and simmer together. Continue to cook for another 1-2 minutes until the fish cakes are tender.
Step 4
Finally, add the drained rice cakes and the chopped green onions. Simmer for an additional 2-3 minutes, or until the rice cakes are soft and the soup has slightly thickened. Your delicious Eomuk Tteok Mandu Guk is ready! Serve immediately while hot.
