This is a recipe my mom used to make for me when I was little! I always thought I’d make it for my own kids later, but my husband loves it even more haha. The ingredients are super simple, it cooks up quickly, and it’s so delicious that I find myself making it very often! I like to make it lightly seasoned and enjoy it with kimchi, like Kkakdugi (cubed radish kimchi) or Altabi kimchi (young radish kimchi). It’s especially a must-make when I have tasty kimchi at home!

  • 2 packs Instant Rice

Seasoning & Other Ingredients

  • A little Cooking Oil
  • 1-2 Tbsp Oyster Sauce (adjust to your taste)

First, let’s prepare all the ingredients for the dish. This recipe uses very simple ingredients. For ease and to save time, I’m using two packs of instant rice instead of cooking fresh rice. It’s a lifesaver on busy days and also means less washing up!

Now, heat a small amount of cooking oil in the pan. Crack in the two eggs and stir them around with chopsticks or a spoon, cooking them until about 90% done to make scrambled eggs. It’s important not to overcook them; eggs cooked to about 90% prevent the rice from clumping and contribute to a delightfully chewy texture. Scrambled eggs like this coat each grain of rice, making the fried rice even more fluffy and delicious.

To prevent the eggs from burning, turn off the heat temporarily. With the heat off, it’s time to add all the other prepared ingredients to the pan. Add the entire can of tuna, including the oil. The tuna oil adds a wonderful depth of flavor and savory richness, so it’s best not to drain it. You won’t need to add extra oil because of this. Next, add the two packs of instant rice and 1-2 tablespoons of oyster sauce. Oyster sauce adds umami, but it can be quite salty, so I recommend starting with just 1 tablespoon, tasting, and then adding more to your preference. Be careful not to add too much, or it might become too salty!

Now, turn the heat back on and stir-fry everything together, mixing well. Continue to cook until the rice starts to lightly stick to the bottom of the pan. That’s it – the process is complete! It’s incredibly simple, but I guarantee the taste is outstanding. Enjoy your warm and delicious fried rice.
