  • Ingredient Category : Beef
  • Occasion : Quick & Easy
  • Cooking : Stir-fry
  • Servings : 1 serving
  • Cooking Time : Within 10 minutes
  • Difficulty : Anyone

Main Ingredients

  • 2-3 bunches fresh spinach (leaves only)
  • 3 slices flavorful beef brisket (cut into bite-sized pieces)
  • 1/5 onion (thinly sliced)
  • 2 Korean green chili peppers (finely chopped, seeds removed)
  • 1 Tbsp chopped scallions (white parts preferred)
  • 1 Tbsp perilla oil (deulgireum)
  • 2/3 bowl cooked rice

Seasoning Ingredients

  • 1 tsp minced garlic
  • 1 tsp soy sauce
  • 1 Tbsp cooking wine (mirin or sake)
  • 1 tsp fish sauce (tuna extract)
  • 1 tsp plum extract (maesilcheong)
  • 1 tsp sesame seeds

Cooking Instructions

Step 1

First, wash the fresh spinach thoroughly under running water. Remove any muddy stems and use only the leaves. If the leaves or stems are too long, cut them in half for easier eating. This helps the seasoning distribute evenly and makes it more enjoyable to eat.

Step 1

Step 2

Peel the onion and slice it thinly. Remove the stems from the Korean green chili peppers, shake out the seeds, and finely chop them. You can adjust the amount of chili peppers if you prefer it spicier. Cut the beef brisket into about 2-3 cm pieces for easy consumption. If they are too long, they can be awkward to stir-fry.

Step 2

Step 3

Chopped scallions and minced garlic are key ingredients for adding aroma. Having them prepared in advance will make your cooking process smoother without any last-minute rushes. Using fresh minced garlic will significantly enhance the flavor.

Step 3

Step 4

Heat a wide pan over medium heat and add 1 tablespoon of perilla oil. Add all the prepared ingredients except the spinach: sliced onion, chopped green chilies, sliced beef brisket, minced garlic, and chopped scallions. Stir-fry until the beef brisket is cooked through and the onions become translucent. The fat from the beef brisket will blend with the vegetables, adding richness.

Step 4

Step 5

Once the beef brisket is partially cooked and the onions have softened, add all the seasoning ingredients: 1 teaspoon soy sauce, 1 tablespoon cooking wine, 1 teaspoon fish sauce, and 1 teaspoon plum extract. Mix them well with the other ingredients. It’s best to maintain medium-low heat to prevent the seasonings from burning.

Step 5

Step 6

Now, add all the prepared spinach to the pan and stir-fry quickly over high heat. Spinach cooks very fast; avoid overcooking to prevent it from becoming mushy and losing its vibrant color. Stir-fry for just about 1-2 minutes, or until the spinach is just wilted. Keep stirring to prevent anything from sticking to the pan.

Step 6

Step 7

Once the spinach retains its bright green color and is tenderly wilted, sprinkle in 1 teaspoon of sesame seeds and toss gently to combine. The nutty flavor of the sesame seeds will elevate the overall taste. Turn off the heat and give it one final mix.

Step 7

Step 8

Serve the warm cooked rice in a bowl first. Generously top the rice with the delicious spinach and beef brisket stir-fry you just made. Even on your laziest days, you’ll have a satisfying and flavorful meal! For an extra touch, consider adding a fried egg on top.
