Did you find yourself not eating many sweet potatoes this winter? I received two boxes of delicious sweet potatoes from a neighbor, and after enjoying one box, I still have about half of the second one left! Perhaps there were too many other delicious snacks available, or maybe it’s because the children are growing up and have more food choices now. Regardless, the sweet potatoes are still in great condition, so I need to make sure we enjoy the remaining ones! I suddenly craved Matang and decided to make it quickly and super simply. You can easily recreate this at home too!
Ingredients- 3 Sweet Potatoes (medium size)
- 3 Tbsp Sugar
- 1 Pinch of Salt
- Frying Oil (enough to cover sweet potatoes halfway)
Cooking Instructions
Step 1
Prepare two medium-large sweet potatoes and one medium sweet potato. First, peel them thoroughly.
Step 2
To ensure they cook through evenly and absorb the syrup well, cut the sweet potatoes into pieces that are not too large, about 2-3 cm in size. Rotate the sweet potato as you cut to achieve uniform pieces.

To make the Matang crispy, soak the cut sweet potatoes in water for a short while to remove excess starch. Ideally, soak for over 30 minutes for the best crispiness, but for a ‘quick Matang,’ soaking for about 10 minutes while changing the water twice is sufficient.

Drain the soaked sweet potatoes using a colander. Then, pat them completely dry with paper towels or a clean kitchen cloth. This step is crucial to prevent oil splattering during frying and to achieve a crispier result.
Step 5
Once the sweet potatoes are dried, place them in a frying pot and sprinkle 3 tablespoons of sugar evenly over them. The sugar will caramelize, creating the delicious sweet coating for the Matang.
Step 6
Add a pinch of salt to balance the sweetness and enhance the overall flavor. This small addition will elevate the taste of your Matang!
Step 7
Pour enough frying oil into the pot so that the sweet potato pieces are about halfway submerged. You don’t need to use a large amount of oil; this quantity will be sufficient to make delicious Matang.
Step 8
Now, it’s time to fry. Cook over medium heat, not high heat, to allow them to cook through evenly. Occasionally stir the sweet potatoes to ensure they fry uniformly. Continue frying until they turn a golden, appetizing brown color. Once fried, remove them from the oil and let any excess oil drain.
