Cooking Instructions
Step 1
Prepare Ingredients: The journey to delicious braised pork ribs begins with careful preparation!
Step 2
Soaking Pork Ribs: Soak the pork ribs in cold water for about 1 hour to remove excess blood. Changing the water a few times during this process will help eliminate any gamey odors more effectively. While the ribs are soaking, soak the wide glass noodles in cold water for the same duration.
Step 3
Soak pork ribs in cold water for about 1 hour to remove blood. (Change the water a few times in between!)
Step 4
Soak Wide Glass Noodles: While soaking the pork ribs, also soak the wide glass noodles in cold water for about 1 hour. This allows the noodles to absorb the sauce richly, making them even more delicious.
Step 5
Parboiling: After removing the blood, parboil the pork ribs in boiling water with 1/4 cup of cooking wine for about 5 minutes. This step removes impurities and unwanted odors, ensuring a clean flavor. Rinse the parboiled ribs thoroughly under cold running water, paying special attention to the spaces between the bones.
Step 6
First Marination: In a bowl, combine the cleaned pork ribs with 2/3 of the Ottogi Pork Rib Sauce and 2 Tbsp of soy sauce. Mix well and let it marinate for about 10-20 minutes. This allows the flavors to penetrate the meat more deeply.
Step 7
Prepare Vegetables: Cut potatoes, sweet potatoes, carrots, and radish into large, bite-sized pieces (about 2-3 cm). Gently round off the edges; this helps them hold their shape better during cooking. Slice the onion thickly and the green onion diagonally. Slice the Cheongyang peppers diagonally for a touch of heat. Leave the whole garlic cloves as they are.
Step 8
Layer Ingredients in Pot: Place the marinated pork ribs at the bottom of a pot. Then, arrange the prepared potatoes, sweet potatoes, carrots, radish, onion, and whole garlic cloves neatly on top.
Step 9
Add Water and Boil: Pour 250ml (about 1 cup) of water into the pot and bring it to a boil over high heat. Adjust the water level so it partially covers the ingredients; too much water can make the dish bland.
Step 10
Simmer and Adjust Seasoning: Once the liquid boils, reduce the heat to medium-low, cover the pot, and simmer gently for about 20-30 minutes. If the liquid reduces too much, add the remaining 1/3 of the Ottogi Pork Rib Sauce and a little water as needed to adjust the seasoning. If it’s still not salty enough, add more soy sauce.
Step 11
Finishing Touches and Adding Noodles: When the ribs and vegetables are tender, push the ribs and vegetables to one side of the pot. Add the soaked wide glass noodles and continue to simmer for another 2-3 minutes, stirring occasionally to prevent sticking and to ensure the noodles absorb the sauce evenly. Finally, add the green onions and Cheongyang peppers, and simmer for another moment. Your delicious braised pork ribs are ready to be enjoyed hot!
