This is an incredibly simple pork rib stew made in a pressure cooker! It’s super easy and uses minimal ingredients. Enjoy tender, flavorful pork ribs with this foolproof recipe.
Main Ingredients- Pork ribs 900-1000g
Additional Ingredients- Scallions or green onions, 1 bunch (chopped)
Braising Sauce- Soy sauce 6 Tbsp
- Cooking wine (Mirin) 2 Tbsp
- Minced garlic 2 Tbsp
- Sesame oil 2 Tbsp
- Oligosaccharide (or corn syrup) 2 Tbsp
- Sugar 0.5 Tbsp (adjust to taste)
- Black pepper 0.5 tsp
- Ground ginger 0.5 tsp
- Scallions or green onions, 1 bunch (chopped)

Cooking Instructions
Step 1
First, soak the pork ribs in cold water for about 30 minutes to 1 hour to remove excess blood. Trim off any excess fat if you prefer. Properly draining the blood is key to a delicious, odorless stew.
Step 2
While the ribs are soaking, let’s prepare the braising sauce. In a large bowl, combine 6 Tbsp soy sauce, 2 Tbsp cooking wine, 2 Tbsp minced garlic, 2 Tbsp sesame oil, 2 Tbsp oligosaccharide, 0.5 Tbsp sugar, 0.5 tsp black pepper, and 0.5 tsp ground ginger. Mix well until thoroughly combined. You can adjust the amount of sugar to your preference.
Step 3
Drain the pork ribs from the soaking water. Add the pre-made braising sauce and the chopped scallions (or green onions) to the ribs. Gently mix everything together with your hands to ensure the ribs are well-coated.
Step 4
Cover the bowl with plastic wrap or transfer to an airtight container, and let the ribs marinate in the refrigerator for at least 30 minutes. For even deeper flavor, marinating for 1 hour is recommended.
Step 5
Now, it’s time to use the pressure cooker! Place the marinated pork ribs, along with all the sauce, into the pressure cooker. Make sure to scrape all the delicious marinade from the bowl into the cooker to prevent sticking.
Step 6
Securely close the lid of the pressure cooker. Turn the heat to high and bring it to pressure until the steam vent starts whistling. Once the vent whistles, reduce the heat to medium-low and cook for 8 minutes. Cooking immediately on high heat after it whistles can cause it to burn.
Step 7
After 8 minutes of cooking, turn off the heat and allow the pressure to release naturally. Do not force the steam out, as this can make the meat tough. Wait patiently until all the pressure has subsided.
Step 8
Once the pressure has completely released, carefully open the lid. You’ll notice there’s still quite a bit of liquid remaining. Now, we’ll reduce the sauce to coat the ribs beautifully.
Step 9
With the lid off, turn the heat back to high. Simmer the stew, stirring occasionally, until the sauce thickens to your desired consistency. Stir frequently to prevent the ribs from sticking to the bottom. The sauce will become glossy and rich as it reduces.
Step 10
Transfer the finished braised pork ribs to a serving dish. Sprinkle with sesame seeds for extra flavor and visual appeal. Your delicious and tender pork rib stew is ready to be enjoyed with a side of warm rice!
