This Chashu Don, featuring crispy pan-fried pork belly coated in a savory and sweet soy sauce, is a delightful meal that everyone in the family can enjoy. It’s simple yet packed with rich flavors to elevate your dining table.
Main Ingredients (for 1 serving)- Pork belly 1 strip (approx. 200g)
Sweet and Savory Soy Sauce Glaze- Soy sauce 2 Tbsp
- Water 50ml
- Oligosaccharide (or corn syrup) 1 Tbsp
- Oyster sauce 1 Tbsp
- Mirin (or cooking sake) 1 Tbsp
- Sugar 1/2 Tbsp
- Black pepper, a pinch
- Green onion (scallion) 10cm piece
- Onion 1/4 medium
- Soy sauce 2 Tbsp
- Water 50ml
- Oligosaccharide (or corn syrup) 1 Tbsp
- Oyster sauce 1 Tbsp
- Mirin (or cooking sake) 1 Tbsp
- Sugar 1/2 Tbsp
- Black pepper, a pinch
- Green onion (scallion) 10cm piece
- Onion 1/4 medium
Cooking Instructions
Step 1
First, peel the onion and slice it thinly into strips. Soak the onion slices in cold water for about 10 minutes to mellow out their sharpness. This step helps to retain the onion’s crisp texture and enhance its sweetness. Drain well and set aside.
Step 2
Cut the green onion into 10cm long pieces. These will be used as a topping, so prepare them neatly.
Step 3
In a large frying pan, place the pork belly and cook over medium heat until it’s golden brown and crispy on both sides. Gently pat off any excess rendered fat with a paper towel; this helps the sauce adhere better and prevents the dish from being too greasy.

While the pork belly is cooking, prepare the sauce. In a small pot or saucepan, combine 50ml of water and 2 Tbsp of soy sauce.

Add 1 Tbsp of oligosaccharide (or corn syrup) and 1 Tbsp of mirin (or cooking sake) to the pot. These ingredients will add sweetness and a beautiful glossy finish.

Stir in 1 Tbsp of oyster sauce for an extra layer of savory flavor.

Add 1/2 Tbsp of sugar to balance the flavors. You can adjust the sweetness to your preference.

Remove the cooked pork belly from the pan. Leaving a little of the rendered fat in the pan (or using a clean pan), pour the prepared soy sauce mixture into the pan. Add the sliced onions to the sauce and bring it to a simmer over medium-low heat. Simmering the onions in the sauce will bring out their natural sweetness, making the glaze even more flavorful.
Step 10
Once the soy sauce mixture is bubbling gently, slice the crispy pork belly into bite-sized pieces and add them back into the pan. Reduce the heat to low and let the pork belly simmer and absorb the sauce for about 5-7 minutes, until it’s nicely glazed and tender. Stir occasionally to prevent burning.

Prepare a serving bowl by filling it with 1 serving of warm rice. You can lightly drizzle some sauce over the rice beforehand.

Arrange the glazed, sliced pork belly attractively over the warm rice. Don’t forget to spoon the delicious remaining sauce from the pan over the pork and rice; this adds a wonderful depth of flavor.
