Main Ingredients- 2 burdock roots
- 1/4 cup perilla oil (approx. 50ml)
- 2 cups water (approx. 400ml)
- 1/4 cup soy sauce (approx. 50ml)
- 4 Tbsp oligosaccharide
- 4 Tbsp black sugar
Cooking Instructions
Step 1
Gently scrape the skin off the fresh burdock roots with the back of a knife and julienne them thinly. Rinse the julienned burdock roots lightly in water and drain. This helps prevent the burdock from turning brown due to air exposure and reduces its astringency.
Step 2
Heat a pan and add 1/4 cup of perilla oil. Add the prepared burdock root. Once you hear a sizzling sound, continue to stir-fry for another 3 minutes. Stir-frying in perilla oil enhances the burdock’s unique aroma and adds a nutty flavor.
Step 3
In the same pan, add 2 cups of water and 1/4 cup of soy sauce. Bring to a boil over high heat, then reduce to medium heat, cover, and simmer for about 15 minutes. This process will tenderize the burdock root and allow the seasoning to penetrate fully.
Step 4
After 15 minutes, remove the lid and add 4 Tbsp of oligosaccharide and 4 Tbsp of black sugar. Uncover the pan and simmer over low heat until the sauce is reduced and coats the burdock root. Stir occasionally to prevent the sauce from burning, and finish with a glossy sheen. Your delicious braised burdock root is ready!
