Trim the root ends of the garlic cleanly and gently brush off any soil. Also, cut off the tough stem part and carefully peel the outer skin.

Tip: Instead of peeling off all the outer skin, leaving one or two thin layers of skin on the garlic can help the black garlic ferment more moistly and chewily. This plays an important role in maintaining the moisture of the black garlic.

Maintaining a steady ‘Keep Warm’ state for 15 days is key.
