Basic Ingredients
  • 1 bowl of warm cooked rice
  • 1 egg yolk
  • 1/4 stalk of green onion (white part mainly)
  • Pinch of salt (to taste)

Cooking Instructions

Step 1

First, place 1 bowl of warm cooked rice in a bowl and add 1 egg yolk. Mix well with a spoon or spatula until each grain of rice is evenly coated with the yolk. This will prevent the rice from clumping and ensure it fries up nice and fluffy.

Step 2

Wash the green onion thoroughly and finely mince it, focusing on the white parts. The onion’s aroma will add flavor to the entire fried rice. Finely chopping the onion helps prevent burning and allows for the creation of fragrant green onion oil.

Step 3

Heat a pan over medium-low heat and add a generous amount of cooking oil. Add all the minced green onion and stir-fry until fragrant and golden brown, being careful not to burn it. This process creates ‘green onion oil’ infused with the onion’s flavor. The key is to fry until the onion turns golden and releases a sweet aroma.

Step 4

Once the green onion oil is fragrant, add the yolk-coated rice to the pan. Turn the heat up to high and stir-fry the rice. Use a spatula to break up any clumps and stir-fry for about 2-3 minutes until the rice is loose and slightly toasted. Each grain of rice should be coated in oil and look glossy.

Step 5

Finally, add a pinch of salt to the fried rice and mix quickly to season. Adjust the salt according to your preference. Even with just salt, the natural nuttiness of the rice combined with the aromatic green onion oil creates a truly delicious fried rice. Serve immediately and enjoy while warm!
