Super Simple Apple Juice Bingsu (Shaved Ice)
An incredibly easy Bingsu made with frozen apple juice! Apple Juice Bingsu.
I received a box of apple juice as a gift last winter. Since my family doesn’t drink many beverages, quite a bit is still left even after several seasons have passed. We’ve been freezing the apple juice and enjoying it like ice cream on hot summer days. Even just eating the frozen apple juice is refreshing and makes a great summer snack. But by transforming the frozen apple juice into Bingsu, you can quickly create a generous bowl of shaved ice. It’s literally super, super simple and quick to make.
Ingredients- 2 packs frozen apple juice
- 1 glutinous rice cake (mochi with filling, e.g., red bean paste)
- 2 Tbsp coarsely chopped nuts
- 1 vanilla ice cream cone
Cooking Instructions
Step 1
First, place the 2 packs of frozen apple juice into a bowl. Because apple juice contains sugar, its frozen texture is different from that of plain water ice; it has a sorbet-like consistency. Even if the ice chunks are large, they break easily, so don’t try to break them into very small pieces. Aim for a texture that’s still slightly chunky, like sorbet.
Step 2
Next, take 1 glutinous rice cake (mochi) filled with red bean paste and walnuts and cut it into 4 equal pieces. Arrange these pieces on top of the frozen apple juice.
Step 3
Then, sprinkle 2 tablespoons of coarsely chopped nuts over the mochi pieces. This adds a lovely crunch and nutty flavor.
Step 4
Finally, cut 1 vanilla ice cream cone into pieces and place them on top of the Bingsu. That’s it! You’re ready to enjoy this refreshing Apple Juice Bingsu. Serve immediately and savor the cool, sweet flavors. It’s a wonderfully simple yet satisfying summer treat.
