  • 50g dried seaweed

Seasoning

  • 6 Tbsp cooking oil
  • 1 Tbsp sugar
  • 1 Tbsp toasted sesame seeds

First, prepare the dried seaweed. Cut it into bite-sized pieces. I find it easiest to twist and tear it by hand, which also helps maintain its shape. You can also use scissors to cut it if you prefer.

Now, heat a frying pan over medium heat and add the cooking oil. Pour enough oil to coat the seaweed evenly, giving it a glossy sheen. Add the seaweed and begin to stir-fry. Be careful not to let the heat get too high, as the seaweed can burn quickly. Maintaining medium heat is key to prevent burning.

Once the seaweed is sizzling and lightly golden, turn off the heat immediately. Sprinkle the sugar and toasted sesame seeds over the seaweed. Stir gently, using the residual heat from the pan to meld the flavors. If you notice too much oil pooling on the surface, you can briefly place the seaweed on paper towels to absorb the excess oil for a cleaner finish. This will result in a perfectly seasoned and delicious Gim-jaban.
