  • Dried Shredded Squid (Jinmichae) 300g (approx. 3 handfuls)
  • Toasted Sesame Seeds, a pinch
  • Sesame Oil, a drizzle (optional)

Cooking Instructions

This is the pre-treatment step to make the dried shredded squid tender. You can lightly steam it in a steamer for about 30 seconds to 1 minute, or quickly rinse it under hot running water and then squeeze out the excess moisture thoroughly. This prevents the jinmichae from becoming tough and helps it absorb the seasoning well. Handle it gently to avoid peeling off the red outer skin.

Place the pre-treated dried shredded squid into a large bowl, or you can even use the plastic bag it came in. Add 4 Tbsp of gochujang, 1.5 Tbsp of tomato ketchup, and 2 Tbsp of rice syrup. Rice syrup adds a mild sweetness and helps create a glossy finish. You can also use corn syrup or oligodang. (Pro Tip: If you add the seasoning directly into the bag the jinmichae was in, you’ll have less dishes to wash!)

Now it’s time to gently mix and coat the jinmichae with the seasoning. Securely hold the opening of the plastic bag (if using) and knead it gently with your hands. Be careful not to knead too vigorously, as this can make the jinmichae mushy. Gently mix until the seasoning evenly coats all the strands. This should take about 1-2 minutes.

Transfer the evenly coated jinmichae to your storage container. Finally, sprinkle a generous pinch of toasted sesame seeds for added nutty flavor. (Optional: Sesame oil can sometimes overpower the original flavor of jinmichae, so it’s recommended to omit it or use only a very small amount according to your preference.) Your delicious Jinmichae salad is now ready! It’s great to eat immediately, or you can store it in the refrigerator for the next day.
