These are perfect for busy mornings or as a simple lunchbox side! With just seaweed flakes and sesame oil, you can easily make delicious rice balls in under 10 minutes. We’ve added savory anchovies and crunchy nuts for extra nutrition and texture. These are a universally loved snack for both kids and adults.
Main Ingredients- 4 servings of warm cooked rice
- 1 handful of seaweed flakes (seasoned or plain)
- 1 handful of nuts (walnuts, almonds, etc.)
- 1 handful of anchovies (stir-fried small anchovies)
Seasoning & Add-ins- 2 Tbsp sesame oil
- Pinch of salt (to taste)
- 2 Tbsp sesame oil
- Pinch of salt (to taste)
Cooking Instructions
Step 1
First, prepare the stir-fried anchovies to be added to the rice. If you have whole stir-fried anchovies, use scissors to cut them into small, bite-sized pieces. It’s also a good idea to finely chop the nuts to the same size for better mixing with the rice and easier chewing.
Step 2
Add the finely chopped anchovies and chopped nuts to the warm rice. Drizzle in 2 tablespoons of sesame oil for a rich, nutty aroma. Sprinkle a pinch of salt with your fingers to season. Taste and if it’s not salty enough, adjust the amount of salt or sesame oil to your preference. Mix everything together well!
Step 3
Put on disposable gloves and gently mix the prepared rice by kneading it softly. It’s important to mix gently without crushing the rice grains. Then, shape the rice into bite-sized balls. You can make them small for kids’ lunchboxes or a bit larger for adult meals.
Step 4
Don’t worry if you don’t have anchovies or nuts! You can also mix in a can of drained tuna or a little mayonnaise for a delicious alternative. Even with just seaweed and rice, you’ll have simple yet tasty rice balls. This entire process takes about 10 minutes! These are a favorite among young children.
