Super Easy & Sweet Korean Sweet Pumpkin Porridge (Danhoppak Juk)
Quick & Easy Danhoppak Juk in 30 Minutes
You can make this delicious sweet pumpkin porridge in under 30 minutes! It’s naturally sweet and wonderfully comforting. Perfect for breakfast or a light meal.
Main Ingredients- 1 medium Korean sweet pumpkin (Danhoppak)
- 1 bowl of cooked rice (warm)
- Pinch of salt
Cooking Instructions
Step 1
Wash the Korean sweet pumpkin thoroughly. Cut it in half and scoop out the seeds and stringy bits with a spoon. Place the prepared pumpkin in a pot with 2 cups of water (about the volume of two paper cups). Cover and simmer for about 15-20 minutes, or until the pumpkin is very tender. You can easily pierce it with a chopstick when it’s done.
Step 2
Once the pumpkin is cooked, peel off the skin and put the flesh into a blender. Add 1 bowl of warm cooked rice and 2 to 3 cups of water. (Adjust the amount of water to achieve your desired porridge consistency; add more if you prefer a thinner porridge.) Blend everything until it becomes a very smooth, creamy mixture. Ensure there are no lumps for the best texture.
Step 3
Pour the blended pumpkin mixture back into the pot. Place it over low heat and stir constantly with a spatula or ladle to prevent it from sticking to the bottom. Once the porridge begins to bubble, continue to cook for another 1-2 minutes. Season with a tiny pinch of salt to taste – be careful not to add too much. Serve warm and enjoy this delightful porridge!
