Quick and Easy Jeyuk Bokkeum Made with Frozen Pork Belly
Don’t worry if you have frozen pork belly in your freezer! You can create a delicious Jeyuk Bokkeum meal with simple seasoning and vegetables. This recipe is perfect for camping trips or dinner parties. Enjoy a tasty meal with this recipe!
Main Ingredients- Pork Belly 300g (frozen)
- Onion 1/2 medium
- Green Onion 1 stalk
- Carrot 1/3 medium
- Chili Pepper (Korean or red) 1
- Water 1 cup (200ml)
All-Purpose Sauce- Gochugaru (Korean chili flakes) 3 Tbsp
- Black Pepper Powder 1/2 Tbsp
- Ginger Powder 1/2 Tbsp (or 1/2 tsp minced fresh ginger)
- Dashida (MSG-based seasoning) 1/2 Tbsp
- Sugar 1 Tbsp
- Soy Sauce 1/2 Tbsp
- Corn Syrup or Oligosaccharide 2 Tbsp
- Minced Garlic 1 Tbsp
- Gochujang (Korean chili paste) 1 Tbsp
- Soju or Cooking Wine 2 Tbsp
- Gochugaru (Korean chili flakes) 3 Tbsp
- Black Pepper Powder 1/2 Tbsp
- Ginger Powder 1/2 Tbsp (or 1/2 tsp minced fresh ginger)
- Dashida (MSG-based seasoning) 1/2 Tbsp
- Sugar 1 Tbsp
- Soy Sauce 1/2 Tbsp
- Corn Syrup or Oligosaccharide 2 Tbsp
- Minced Garlic 1 Tbsp
- Gochujang (Korean chili paste) 1 Tbsp
- Soju or Cooking Wine 2 Tbsp
Cooking Instructions
Step 1
Defrost the frozen pork belly by soaking it in cold water or using your microwave’s defrost function until completely thawed. Removing excess blood and patting it dry with paper towels will result in a cleaner cook.
Step 2
Slice the onion into strips. Cut the green onion diagonally. Thinly slice the carrot, either flat or into strips. Seed the chili pepper and slice it diagonally. Cutting the vegetables into bite-sized pieces ensures the sauce evenly coats everything for better flavor.
Step 3
In a bowl, combine gochugaru, black pepper powder, ginger powder, Dashida, sugar, soy sauce, corn syrup, minced garlic, gochujang, and soju. Mix well to create a delicious all-purpose sauce. This sauce is versatile and can be used in various stir-fry dishes beyond Jeyuk Bokkeum.
Step 4
Place the thawed pork belly in a large bowl and add the prepared sauce. Mix and massage the sauce into the pork thoroughly, ensuring every piece is coated. Let it marinate for about 5 minutes to allow the flavors to deepen.
Step 5
Heat a pan over medium-high heat. Add the marinated pork belly and pour in 1 cup of water. Stir-fry the pork. Cooking over high heat will help keep the meat tender and juicy. Allow the liquid released from the pork to reduce.
Step 6
Once most of the liquid has evaporated and the sauce has thickened slightly, add the prepared onion, carrot, green onion, and chili pepper to the pan. Stir-fry quickly over high heat. Cook just until the vegetables are slightly tender but still retain a pleasant crunch.
Step 7
Continue to stir-fry for another 2-3 minutes until all ingredients are well combined and the Jeyuk Bokkeum is ready! Serve it over a hot bowl of rice as a delicious pork rice bowl, or enjoy it as a hearty meal with fresh lettuce wraps.
