- 175g cake flour (or pastry flour)
- 90g unsalted butter, cold and cubed
- 50g granulated sugar
- 1g salt
- 50g heavy cream, cold
- 5g baking powder

In a large bowl, whisk together the cake flour (175g), granulated sugar (50g), salt (1g), and baking powder (5g). Ensure they are thoroughly combined. This step helps to evenly distribute the leavening agent and other dry ingredients for a consistent bake.

Add the cold, cubed unsalted butter (90g) to the dry ingredients. Using a pastry blender, bench scraper, or even your fingertips, cut the butter into the flour mixture until it resembles coarse crumbs or small peas. Work quickly to prevent the butter from melting.

Continue to rub the butter into the flour mixture with your fingertips, if needed. The goal is to create a texture that looks like breadcrumbs with some larger, pea-sized pieces of butter remaining.
