Rice Cooker Cakes for Holidays
While not a traditional method, you can make rice cakes at home that have a chewy texture similar to freshly made garaetteok (Korean cylinder-shaped rice cakes). It’s a fun and easy way to enjoy homemade tteok!
Rice Cake Dough Ingredients- 140g rice flour (sifted)
- 140g potato starch (adds chewiness)
- 2 Tbsp sugar (for a subtle sweetness)
- 1/2 tsp salt (balances flavor and enhances sweetness)
- 16 Tbsp boiling water (to adjust dough consistency)
Cooking Instructions
Step 1
Prepare the dry ingredients for a quantity that fits a standard 6-cup rice cooker. A 1:1 ratio of rice flour to potato starch is key for a chewy texture. In the rice cooker pot, combine 140g rice flour, 140g potato starch, 2 Tbsp sugar, and 1/2 tsp salt. Gradually pour in 16 Tbsp of freshly boiled water, mixing to create a dough (this is called ‘ikbanjuk’ or cooked dough).
Step 2
Using a spatula or your hands, knead the mixture until it forms a cohesive dough. If the dough seems too dry and crumbly, add more hot water, about 1 tablespoon at a time, while continuing to knead. Knead until the dough is smooth and pliable. Proper kneading ensures a good texture.
Step 3
Pour 200ml of water into the inner pot of the rice cooker and place the steaming rack inside. Shape the dough into small, bite-sized balls or logs, and arrange them on the steaming rack. Avoid overfilling the pot, as the rice cakes will expand slightly as they steam. Leave some space between each piece.
Step 4
Select the ‘Steam’ or ‘Special Menu’ function on your rice cooker and set it for 20 minutes. The rice cakes will puff up slightly as they cook. Once done, resist the urge to open the lid immediately. Let the rice cakes steam for an additional 10 minutes (natural release) for a more moist and chewy result. Once ready, remove them from the rice cooker and let them cool slightly before serving.
Step 5
These rice cakes are delicious when warm, offering a slightly crisp exterior and a wonderfully chewy interior. Serve them with honey or ‘jochung’ (Korean syrup) for a sweet treat, or coat them with roasted soybean powder (‘konggaru’) or red bean paste (‘pat goemul’). They make a perfect snack or a light meal!
