Main Ingredients- 180g Hotcake Mix (Pancake Mix)
- 3 Eggs
- 5 Tbsp Sugar (adjust based on pancake mix sweetness)
- 60g Walnuts
- 2.5 Tbsp Unsalted Butter
Cooking Instructions
Step 1
First, prepare the butter. Place 2 tablespoons of butter in a microwave-safe bowl. Cover with a lid that has holes, or cover with plastic wrap and poke 5-6 holes with a toothpick. Microwave for 20 seconds until the butter is completely melted. This melted butter will add richness to the batter.
Step 2
Crack 3 eggs into a separate bowl and add 5 tablespoons of sugar. Whisk thoroughly until the sugar dissolves and the egg mixture is smooth. If your pancake mix is already sweet, consider reducing the amount of sugar. The mix I used was less sweet, so I added a generous amount of sugar.
Step 3
Crush the walnuts by hand into bite-sized pieces. It’s best to crush them so there’s still some texture, rather than making them into a fine powder.

In a larger bowl, pour in the hotcake mix. Add the melted butter and the egg-sugar mixture.

Using a spatula or whisk, gently mix until just combined and no dry flour is visible. The batter should be slightly thick, not too runny, so it holds its shape.

Now, let’s start cooking. Place a frying pan over very low heat. Add the remaining 0.5 tablespoon of butter and let it melt, coating the entire pan. It’s crucial to keep the heat as low as possible to prevent the bread from burning.

Carefully pour the batter into the prepared frying pan. Sprinkle half of the crushed walnuts evenly over the batter. (You can adjust or omit the walnuts based on your child’s preference.)

Cover the frying pan with a lid, and seal the steam vent on the lid with plastic wrap. This prevents moisture from escaping, ensuring the bread cooks up moist and fluffy. Let it cook slowly over low heat for 25 minutes.

After 25 minutes, lift the lid to check. The bread should be nicely golden brown. While delicious as is, let’s flip it over for a more even color.

Carefully flip the bread. The underside should be a lovely golden brown. Cover the pan again with the lid and cook for another 20 minutes. This ensures both sides are perfectly golden and cooked through.
