For the mochi, you’ll need 50g sweet rice flour, 100g sugar, 100ml water, 100g red bean paste, some diced chestnuts, matcha powder for dusting, and starch for dusting the mochi. For the leaf agar-agar jelly, gather 100ml water, 140g white bean paste, 4g agar-agar powder, 70g sugar, a few drops of green food coloring for a light green hue, and a leaf-shaped mold.

Let’s start by making the mochi dough. In a large bowl, combine 50g sweet rice flour, 100g granulated sugar, and 100ml water. Use a spatula or whisk to mix everything together until smooth and well combined, ensuring there are no lumps.
