Main Ingredients (Serves 2)

  • Pork belly slices (thinly sliced) 3 handfuls (approx. 300g)
  • Cabbage 1/4 head (shredded into 2 handfuls)

Special Rice Bowl Sauce

  • Soy sauce 4 Tbsp
  • Oligosaccharide (or corn syrup) 4 Tbsp
  • Mirin (cooking wine) 4 Tbsp
  • Minced garlic 2 Tbsp

Cooking Instructions

Step 1

First, heat a pan and cook the thinly sliced pork belly until it’s golden brown on both sides. Be careful not to overcook it until it becomes too crispy and tough; aim for a tender texture. Once cooked, set the pork belly aside on a separate plate.

Step 1

Step 2

Shred the cabbage as thinly as possible. For two servings, about two handfuls of shredded cabbage is appropriate. Thinly shredded cabbage absorbs the sauce better and has a softer texture.

Step 2

Step 3

Now, let’s make the delicious rice bowl sauce. In a bowl, combine 4 Tbsp of soy sauce, 4 Tbsp of oligosaccharide, 4 Tbsp of mirin, and 2 Tbsp of minced garlic. Stir well until all ingredients are thoroughly mixed.

Step 3

Step 4

Add the shredded cabbage to the sauce bowl. Gently stir-fry the cabbage in the sauce until it just begins to wilt, ensuring it’s coated well. Don’t overcook it until it becomes mushy; just letting it soften slightly is key.

Step 4

Step 5

Once the cabbage has slightly wilted, add all the pre-cooked pork belly slices back into the pan. Stir-fry everything together for about 2-3 more minutes, or until the pork belly is coated in the sauce and has a appetizing brown color. See how simple it is?

Step 5

Step 6

Serve the warm, fluffy rice in bowls. Generously top the rice with the stir-fried cabbage and pork belly. If you like, carefully place a fresh egg yolk on top and finish with a sprinkle of sesame seeds. Adding some thinly sliced green onions if you have them will enhance the aroma and flavor beautifully.
