  • 1 Tbsp sugar
  • 1 Tbsp soy sauce
  • 2 Tbsp gochugaru (Korean chili flakes, optional for added spice)
  • 3 Tbsp cooking oil
  • Hard-boiled eggs, shredded cucumber (for garnish, optional)

Cooking Instructions

First, heat 3 tablespoons of cooking oil in a pan over medium-low heat. Add thinly sliced green onions and gently sauté until fragrant, creating a flavorful scallion oil. Be careful not to burn the green onions; the goal is to extract their aroma.

Once the fragrant scallion oil is ready, add the roughly chopped cabbage and thinly sliced onion. Sauté them together to bring out their natural sweetness. If you have other vegetables like carrots in your fridge, feel free to add them at this stage. If not, just the onion is perfectly fine.

When the vegetables are somewhat softened, add the entire packet of 3-minute jjajang sauce. Pour in 200ml of water and stir well to dissolve the sauce. Ensure the jjajang sauce is smoothly combined with the water without any clumps.

As the sauce begins to simmer, add the pre-soaked tteokbokki rice cakes. Then, stir in 1 tablespoon of gochujang and 1 tablespoon of sugar to enrich the savory and sweet flavors of the jjajang sauce. Stir occasionally as it bubbles gently, ensuring all ingredients are well incorporated.

At this point, you can add jjolmyeon or ramen noodles to make it a Jjajang Rabokki (Jjajang Tteokbokki with noodles). Noodles that require longer cooking times like jjolmyeon or glass noodles (dangmyeon) should be added along with the rice cakes. If using regular ramen noodles, let the rice cakes simmer for about 10 minutes before adding the ramen. It’s important to time the noodle cooking so they don’t become mushy.
