Introducing a super simple diet recipe perfect for zucchini season! This dish combines protein-rich tofu with fresh zucchini, all rolled up in rice paper for a healthy and delicious treat. It’s a light and refreshing meal ideal for the summer.
Main Ingredients- 400g Tofu
- 1 Zucchini
- 15 Rice Paper Wrappers
Seasoning & Others- 1 Tbsp Sesame Oil
- Salt and Pepper to taste

Cooking Instructions
Step 1
First, wash and drain the zucchini. Julienne it thinly. In a bowl, combine the julienned zucchini with 1 teaspoon of salt and gently massage. Let it sit for about 10 minutes to draw out excess moisture. Squeeze the zucchini firmly to remove as much water as possible. Crumble the tofu and squeeze out any excess water. In a separate bowl, combine the squeezed tofu, 1 tablespoon of starch, 1 tablespoon of sesame oil, and a pinch of pepper. Mix and knead until it forms a cohesive mixture, similar to a dough. Adjust the consistency if it seems too wet.
Step 2
Prepare a bowl of lukewarm water (not hot). Dip one rice paper wrapper into the water until it becomes pliable, then carefully lay it flat. Place about one tablespoon of the tofu-zucchini mixture in the center of the softened rice paper.
Step 3
Fold the top and bottom edges of the rice paper over the filling. Then, fold in the left and right sides to create a neat rectangular package. Roll it up snugly to prevent the filling from leaking out.
Step 4
Heat 1 tablespoon of cooking oil in a non-stick pan over medium-low heat. Carefully place the rolled rice paper parcels into the heated pan. Avoid overcrowding the pan, as the wrappers might stick together.
Step 5
Pan-fry the rolls, flipping them occasionally, until they are golden brown and slightly crispy on all sides. Keep the heat moderate to prevent burning and ensure even cooking. Gently flip them to ensure they don’t stick to each other.
Step 6
While the rolls are cooking, prepare a simple dipping sauce by mixing 2 tablespoons of soy sauce, 1 tablespoon of vinegar, and a sprinkle of toasted sesame seeds. Serve the warm, crispy zucchini and tofu rice paper rolls with the dipping sauce. Enjoy this light yet satisfying and healthy summer snack!
