Essential Ingredients- 4 ripe, firm tomatoes
- 1/2 medium onion
Cooking Instructions
Step 1
First, wash the ripe tomatoes thoroughly under running water. Remove the stem core with a knife, and make shallow cross-shaped incisions on the top of each tomato. This will make peeling much easier later on.
Step 2
Bring a pot of water to a rolling boil. Once the water is boiling, carefully add the prepared tomatoes and blanch them for about 30 seconds to 1 minute. You want the skins to just start to peel away.
Step 3
Immediately transfer the blanched tomatoes to a bowl of ice water or cold water to cool them down. Once cooled, gently peel the skin following the cross-shaped incisions you made. The skin should come off smoothly.
Step 4
Finely mince the half onion. In a mixing bowl, combine the minced onion with 2 tablespoons of extra virgin olive oil, 3 tablespoons of fresh lemon juice, 3 tablespoons of honey, 1/2 teaspoon of fine salt, and a pinch of dried parsley flakes.
Step 5
Whisk or stir the dressing ingredients together until well combined. Once the dressing is smooth and emulsified, pour it evenly over the peeled tomatoes.
Step 6
Cover the tomatoes with plastic wrap or transfer them to an airtight container and refrigerate for at least one day to let the flavors meld. After marinating overnight, you’ll have a cool, delicious tomato marinade with deep, complex flavors. Serve alongside salad greens for an extra touch of freshness!
