Main Ingredients- 1 bowl of warm cooked rice
- 1 fresh eggplant
- A little fragrant chives
Special Sauce- 3 Tbsp soy sauce
- 1 tsp gochugaru (Korean red pepper flakes)
- 1 Tbsp plum extract (maesilcheong)
- A little sesame oil
- 1 tsp minced garlic
- A little toasted sesame seeds
- 3 Tbsp soy sauce
- 1 tsp gochugaru (Korean red pepper flakes)
- 1 Tbsp plum extract (maesilcheong)
- A little sesame oil
- 1 tsp minced garlic
- A little toasted sesame seeds
Cooking Instructions
Step 1
First, wash the eggplant thoroughly and pat it dry. Then, cut it in half lengthwise, and slice it diagonally into pieces about 0.5cm thick, not too thick. If you prefer a softer texture, you can cut them slightly thicker. For a chewier, grilled eggplant flavor, slicing them thinly is recommended.
Step 2
Heat a non-stick pan over medium heat. Place the sliced eggplant in a single layer without any oil. Grill them on both sides until their moisture evaporates naturally. You’ll see the water steaming off as they cook. Grill them to your desired texture, keeping an eye on them to prevent burning. They don’t need to be cooked for a long time, making them easier to prepare than many other vegetable dishes.
Step 3
While the eggplant is grilling, let’s make the special sauce. In a bowl, combine the soy sauce, gochugaru, plum extract, minced garlic, sesame oil, and sesame seeds. Mix them well. The key here is to use a minimal amount of soy sauce to let the flavor of the chives shine. Wash the chives and chop them finely. If you have leftover shredded carrots in your fridge, you can add them to the sauce for extra nutrition and a vibrant color. The carrots will not only boost the nutritional value but also make the dish visually appealing, stimulating your appetite.
Step 4
Now, spoon the warm rice into a bowl. Top generously with the deliciously grilled eggplant. Drizzle the prepared special sauce over the eggplant, and your flavorful eggplant rice bowl is ready! Mix everything together well and enjoy. Alternatively, you can first toss the grilled eggplant with the sauce to create a seasoned vegetable side dish, then mix it with the rice for a different delightful taste.
