- Water 500mL

Cooking Instructions
Step 1
First, prepare the Napa cabbage, which adds a lovely sweetness and fresh flavor. Depending on the size of the cabbage, cut it vertically into 2-4 sections, and then into pieces about 2cm wide. Be mindful not to cut them too small, as they might disintegrate during cooking.
Step 2
Next, let’s prepare the leek (or green onion), which will infuse the Sukiyaki with its fragrant aroma. Slice it diagonally into pieces about 2cm thick. Cutting it into larger pieces helps it maintain its shape while simmering.
Step 3
The Enoki mushrooms offer a delightful chewy texture. Trim off the base of the cluster and gently separate the strands so they are easy to handle. For an even richer flavor, feel free to add other mushrooms like shiitake or oyster mushrooms.
Step 4
Now, let’s make the flavorful broth that forms the base of our Sukiyaki. In a pot, combine 500mL of water, 8 dried anchovies, 3 leek roots (or green onion whites), 2 pieces of kombu, and 1 dried chili pepper (if using). Bring this mixture to a boil over high heat. Once boiling, reduce the heat to medium and let it simmer for about 8 minutes to extract all the delicious flavors.
Step 5
Arrange the prepared vegetables – Napa cabbage, leek, and Enoki mushrooms – and the beef slices attractively in your pot. Pour the freshly made broth over the ingredients, ensuring they are well-covered. Now, place the pot over high heat to begin cooking.
Step 6
As soon as the broth begins to boil vigorously, reduce the heat slightly. Stir in 2 tablespoons of Tsuyu (or your soy sauce base) and 1 teaspoon of salt. Taste the broth and adjust the seasoning with more salt or Tsuyu according to your preference, as the saltiness can vary depending on the brands used.
Step 7
Finally, add 1 tablespoon of Mirin (or sake) and a pinch of black pepper (about 1/3 tsp) and let it simmer for another minute or two until everything is perfectly cooked. See? Sukiyaki hot pot is much easier to make than you might think! For a beautiful presentation, transfer the hot pot to a serving dish and gently place a raw egg yolk in the center. The rich yolk can be dipped into directly or swirled into the hot broth for a creamier texture. If you have any leftover egg whites, you can save them to add to noodles or make a congee later for extra richness. Today, we’ve prepared an accessible Sukiyaki hot pot recipe that anyone can make at home. Why not use this recipe to entertain your guests with a delicious and elegant meal? Enjoy your cooking!
