Main Ingredients

  • 300g Shrimp, peeled and deveined
  • 1 medium Zucchini
  • 2 Tbsp Olive Oil
  • 2 Tbsp Sesame Oil
  • 1 Tbsp Cooking Sake (or Mirin)
  • 1 Tbsp Soy Sauce
  • 3 Tbsp Mayonnaise
  • 1 tsp Wasabi paste
  • Pinch of Black Pepper
  • A small bunch of Scallions, finely chopped

Cooking Instructions

Step 1

Prepare the shrimp. Ensure they are peeled and the devein has been removed. If you have unshelled shrimp, carefully remove the shells, leaving the tail on if desired, then make a shallow cut along the back to remove the dark vein. Rinse them thoroughly under cold water.

Step 1

Step 2

Wash the zucchini and slice it into bite-sized pieces, about 0.7cm thick. Half-moon or square shapes work well. Avoid slicing too thinly, as they might break apart during cooking. Finely chop the scallions for garnish.

Step 2

Step 3

Heat a pan over medium heat and add a mixture of olive oil and sesame oil. Once the oil is shimmering, add the prepared shrimp. Stir-fry the shrimp until they turn pink and are about halfway cooked, ensuring they release their delicious aroma.

Step 3

Step 4

When the shrimp start to turn reddish, add all the sliced zucchini to the pan. Gently stir to combine the shrimp and zucchini. Cover the pan with a lid, reduce the heat to medium-low, and let it steam for about 2 minutes until the zucchini is tender.

Step 4

Step 5

Once the zucchini has softened and released some moisture, add the cooking sake, wasabi, soy sauce, mayonnaise, and a pinch of black pepper. Stir everything together well, ensuring the ingredients are evenly coated. Cook until the mayonnaise is melted and coats all the ingredients smoothly. This step is key for a creamy texture.

Step 5

Step 6

Finally, sprinkle the chopped scallions over the stir-fry for a fresh garnish and a touch of color. Your delicious Zucchini and Shrimp Mayo Stir-fry is ready to be served! It’s fantastic spooned over a bowl of hot rice.
