Main Ingredients- 2 cups shrimp meat (Using large shrimp adds a wonderful volume and texture.)
- 200g cooked rice (Served warm)
- 1 Tbsp rice wine (or cooking sake) (To remove any fishiness and enhance flavor.)
- Pinch of salt (for seasoning the shrimp)
- 35g scallions (Chopped for garnish and some for cooking)
- 140g onion (Thinly sliced)
- 30g garlic (Coarsely minced for aromatic flavor. Minced garlic can also be used.)
- Small knob of butter (for finishing richness)
- Pinch of black pepper (for seasoning and finishing)
- 2 Tbsp cooking oil (For sautéing shrimp and vegetables)
Chili Sauce- 2 Tbsp chili powder (for spiciness)
- 2 Tbsp tomato ketchup (for sweetness and depth)
- 2 Tbsp plum syrup (or corn syrup) (for sweetness and glaze)
- 2 Tbsp vinegar (for a touch of acidity)
- 2 Tbsp soy sauce (for savory umami)
- 2 Tbsp water (to adjust sauce consistency)
- 1 Tbsp sugar (to balance flavors and enhance sweetness)
- Pinch of black pepper

Cooking Instructions
Step 1
Prepare the Shrimp: While smaller shrimp like bay or cocktail shrimp work well, using large king prawns adds a substantial bite and visual appeal to the dish. We’ll be using king prawns for an extra special touch.

Marinate the Shrimp: Season the cleaned shrimp meat with 1 tablespoon of rice wine and a pinch of salt. Gently mix and let it marinate for 10 to 15 minutes. This step helps to tenderize the shrimp and remove any unwanted odor.

Prepare the Vegetables: Chop the scallions into about 3-4 cm lengths for cooking, and finely chop some to use as a garnish later. Thinly slice the onion and coarsely mince the garlic. If using pre-minced garlic, that’s perfectly fine too.

Make the Chili Sauce: In a bowl, combine 2 tablespoons of chili powder, 2 tablespoons of tomato ketchup, 2 tablespoons of plum syrup, 2 tablespoons of vinegar, 2 tablespoons of soy sauce, 2 tablespoons of water, 1 tablespoon of sugar, and a pinch of black pepper. Whisk everything together until the sugar is fully dissolved. This ensures the sauce coats the ingredients evenly.
Step 5
Sauté the Ingredients: Heat 2 tablespoons of cooking oil in a pan over medium-high heat. Add the minced garlic and sauté until fragrant, about 30 seconds. Then, add the sliced onions and cook until they become translucent. Finally, add the marinated shrimp and stir-fry until they turn pink and are almost cooked through.
Step 6
Add the Sauce and Combine: Once the shrimp are nearly cooked, pour the prepared chili sauce into the pan. Toss everything together well to ensure the shrimp and vegetables are evenly coated. Add the chopped scallions (for cooking) and stir briefly.
