Cooking Instructions
Step 1
First, thoroughly wash the chives under running water. Once drained, cut them into bite-sized pieces, about 3-4 cm long, and place them in a large bowl. The key is to preserve the chives’ fresh, aromatic flavor.
Step 2
Finely chop the green and red chili peppers after removing the seeds. Add the prepared shrimp to the bowl as well. (If the shrimp are too large, you can cut them in half.) The colorful peppers and plump shrimp add visual appeal and enhance the overall flavor profile.
Step 3
Crack one egg into the bowl. The egg will help bind the ingredients, adjust the batter consistency, and add a rich, savory taste to the pancake.
Step 4
Now, let’s make the batter, the heart of the chive pancake. Measure and add 1 cup of pancake mix and 1 cup of water. The standard ratio of 1:1 pancake mix to water is a great starting point. (Note: The exact volume may vary slightly depending on the type of cup used.)
Step 5
Using a spatula or chopsticks, mix all the ingredients thoroughly until well combined. The batter should have a consistency where the chives and other ingredients are visible and slightly coated, not too thick or too thin. If the batter seems too stiff or too runny, add a little more pancake mix and water in a 1:1 ratio until you reach your desired consistency.
Step 6
Heat a frying pan over medium heat and add a generous amount of cooking oil. Using a ladle or spoon, pour the batter onto the hot pan, spreading it out into a desired shape, preferably a thin, even layer. A thinner pancake will cook more evenly and result in a crispier texture.
Step 7
Once the bottom of the pancake is golden brown and cooked, carefully flip it over with a spatula. It’s best to flip it about twice in total, ensuring both sides are golden and crispy. If the heat is too high, the pancake may burn easily, so maintain medium heat and adjust to low heat if necessary to prevent burning. Serve the crispy Shrimp Chive Pancake with the prepared spicy soy dipping sauce for a delicious meal.
