It’s shrimp season right now, and these plump, juicy shrimp are at their best! I found some fantastic white leg shrimp from the West Sea, and they were so plump and delicious, I immediately thought they’d be perfect for a simple salt grill. They were so plentiful that I used some in ramen and grilled some with offal, but I still had leftovers! What to do with the remaining shrimp?
Ingredients
- 12 fresh white leg shrimp
- 1/2 cup coarse salt
- Dipping sauce (optional, to taste)
Cooking Instructions
Step 1
First, line your non-stick pan with aluminum foil. Then, spread a layer of coarse salt evenly over the foil. This prevents the shrimp from sticking and ensures they cook evenly for a perfectly seasoned dish.
Step 2
Gently rinse the fresh white leg shrimp and arrange them on top of the salt. If you prefer to remove the deveining, you can use a toothpick to gently pierce the back of the shrimp and pull out the dark vein. However, since we’re grilling them and they are very fresh, many people enjoy them with the vein intact for extra flavor!
Step 3
Crucially, always cover the pan while grilling the shrimp! This not only helps them cook evenly but also prevents hot salt from splattering. Cook until the shrimp turn a beautiful pinkish-red color. Be careful not to overcook, as they can become tough. Watching the color change is key to perfect texture.
Step 4
Voila! Your delicious salt-grilled shrimp are ready. They should be slightly crispy on the outside and wonderfully tender and juicy on the inside. Enjoy them hot off the pan for the best flavor. Serve with your favorite dipping sauce for an extra treat!
