Main Ingredients

  • 500g boneless chicken feet
  • 1/2 onion
  • 8 cloves garlic
  • 3 Cheongyang chili peppers
  • 5 Tbsp chopped green onion

Spicy & Sweet Sauce

  • 1 Tbsp minced garlic
  • 1 Tbsp gochujang (Korean chili paste)
  • 3 Tbsp gochugaru (Korean chili powder)
  • 2.5-3 Tbsp oligo당 (oligosaccharide/corn syrup) – adjust for sweetness
  • Pinch of black pepper
  • 3 Tbsp mirin (rice wine)
  • 5 Tbsp soy sauce
  • 1 Tbsp Capsaicin hot sauce (or chili oil)
  • 1 Tbsp cooking oil
  • Sesame oil (to taste)
  • Sesame seeds (to garnish)
  • 50ml water

Cooking Instructions

Step 1

First, prepare 500g of boneless chicken feet. Rinse them thoroughly under running water. Bring a pot of water to a boil, add a small amount of soju (Korean rice wine) if you have it, and blanch the chicken feet for about 5 minutes. This step helps remove any gamey odor and results in a cleaner taste. After blanching, rinse the chicken feet under cold water and drain them well.

Next, take a stir-fry pan and add the blanched chicken feet. Now, add all the sauce ingredients and mix well with your hands, ensuring the chicken feet are evenly coated. The sauce ingredients are: 1 Tbsp minced garlic, 1 Tbsp gochujang, 3 Tbsp gochugaru, 2.5-3 Tbsp oligo당 (adjust the sweetness to your preference), a pinch of black pepper, 3 Tbsp mirin, 5 Tbsp soy sauce, 1 Tbsp Capsaicin hot sauce (use if you like it very spicy, otherwise substitute with chili oil), and 1 Tbsp cooking oil. Marinate the chicken feet for a bit to let the flavors meld.

While the chicken feet are marinating, prepare the vegetables. Thinly slice half an onion. Slice 8 cloves of garlic into thin slivers. Finally, add 5 Tbsp of chopped green onion, a drizzle of sesame oil, and a sprinkle of sesame seeds to finish. **Crucial tip!
