Strawberry Madeleines (Makes approx. 10-12)

  • 55g Strawberry Jam (for a rich, fresh flavor)
  • 20ml Warm Milk
  • 75g Egg at room temperature (about 1.5 eggs)
  • 30g Granulated Sugar
  • 25g Sweetened Condensed Milk
  • 3g Vanilla Extract (for enhanced aroma)
  • 1 pinch Salt (to balance sweetness)
  • 60g Cake Flour (for a tender crumb)
  • 30g Almond Flour (for a subtle nutty flavor and texture)
  • 3g Baking Powder (for lift)
  • 65g Unsalted Butter, melted and cooled to 50-60°C
  • A little Strawberry Chocolate Chips or Freeze-Dried Strawberries (optional decoration)

Strawberry Glaze

  • 80-90g Strawberry-flavored Coating Chocolate
  • A few Strawberry Blossoms or other strawberry sprinkles for decoration

Cooking Instructions

Step 1

In a small bowl, combine the 55g of strawberry jam with 20ml of warm milk. Whisk gently until smooth and well incorporated, ensuring there are no lumps. This will help the jam distribute evenly in the batter.

Step 1

Step 2

In a medium-sized bowl, add the 75g of room-temperature egg, 30g of granulated sugar, 25g of sweetened condensed milk, 3g of vanilla extract, and a pinch of salt. Whisk together until the egg is lightly beaten and the sugar is dissolved. Avoid over-whipping.

Step 2

Step 3

Pour the strawberry jam and milk mixture into the egg mixture. Stir gently until everything is well combined and no streaks of jam remain. You should start to notice a subtle strawberry aroma.

Step 3

Step 4

Sift together 60g of cake flour, 30g of almond flour, and 3g of baking powder directly into the wet ingredients. Gently fold the dry ingredients into the wet mixture using a spatula until just combined and no dry flour is visible. Be careful not to overmix.

Step 4

Step 5

Gradually pour in the 65g of melted unsalted butter, which has been cooled to 50-60°C. Gently mix until the butter is fully incorporated into the batter, creating a smooth, glossy consistency. Ensure the butter is not too hot to avoid cooking the eggs.

Step 5

Step 6

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to chill the dough. This resting period allows the gluten to relax and the flavors to meld, resulting in a better texture. For an even richer flavor, you can chill it for 2-3 hours or overnight.

Step 6

Step 7

Once chilled, spoon or pipe the batter into your madeleine molds, filling each cavity about 70-80% full. Overfilling will cause the madeleines to spread too much and potentially overflow during baking.

Step 7

Step 8

Bake in a preheated oven at 190°C (375°F) for 6 minutes, then reduce the temperature to 180°C (350°F) and bake for an additional 5-6 minutes, or until the madeleines are golden brown and have a characteristic hump. Baking times may vary depending on your oven.

Step 8

Step 9

Remove the madeleines from the oven and let them sit in the molds for about 3 minutes. Then, carefully unmold them and transfer to a wire rack to cool completely. Handling them while hot can cause them to break.

Step 9

Step 10

While the madeleines are cooling, prepare the strawberry glaze. Set up a double boiler by placing a heatproof bowl over a saucepan filled with simmering water. Add 80-90g of strawberry-flavored coating chocolate to the bowl. Stir constantly until the chocolate is completely melted and smooth.

Step 10

Step 11

Once the madeleines are completely cool, dip the bottom or top half into the melted strawberry chocolate, or use a spoon to drizzle it artfully. Place the dipped madeleines onto parchment paper or a clean plate.

Step 11

Step 12

Place the chocolate-coated madeleines in the freezer for about 30 minutes, or until the chocolate coating has hardened completely.

Step 12

Step 13

After freezing, gently tap the back of the mold or carefully wiggle the madeleine to release it from the mold without damaging its shape.

Step 13

Step 14

Decorate the madeleines with strawberry blossoms or freeze-dried strawberry pieces. The vibrant strawberry colors will add a lovely finishing touch.

Step 14

Step 15

Enjoy your delicious homemade strawberry madeleines with a cup of tea or coffee! Their fresh strawberry flavor and sweet taste are sure to brighten your day.
