Zucchini is a staple banchan (side dish) that you can’t miss. While some recipes omit fermented shrimp, this one includes it for an extra layer of savory depth. The umami from the fermented shrimp complements the natural sweetness of the zucchini, making it an irresistible dish.
Main Ingredients- 1 medium zucchini
- 1/3 carrot
- 1/4 onion
Seasoning- 2 Tbsp cooking oil
- 1 Tbsp fermented shrimp (saeujeot)
- 1-2 pinches salt (adjust to taste)
- 1 Tbsp perilla oil
- A pinch of toasted sesame seeds (for garnish)

Cooking Instructions
Step 1
First, wash and prepare the zucchini. Cut the zucchini lengthwise into 4 equal parts, then slice them into about 1cm thick pieces. This thickness is perfect for stir-frying and provides a pleasant texture. Cutting them into quarters first makes slicing easier.
Step 2
Similarly, slice the carrot into thin strips, about the same thickness as the zucchini. Avoid making them too thick, as they will take longer to cook. Cut the onion into chunky, bite-sized squares.
Step 3
Heat 2 tablespoons of cooking oil in a pan over low heat. Add minced garlic (or whole cloves) and gently stir-fry until fragrant, being careful not to burn it. This step infuses the dish with a wonderful aroma.
Step 4
Add the prepared carrots and onions to the pan with the fragrant garlic oil and stir-fry briefly. Then, add the zucchini. Stir-fry continuously over medium-low heat until the vegetables soften and the zucchini becomes slightly translucent. For an even tastier result, continue stir-frying until the zucchini develops a light golden-brown hue.
Step 5
Once the vegetables are partially cooked, add 1 tablespoon of fermented shrimp (saeujeot) and continue to stir-fry. Since fermented shrimp is salty, it’s best to taste the dish before adding extra salt. Adjust the seasoning with 1-2 pinches of salt as needed. Finally, drizzle in 1 tablespoon of perilla oil, give it a quick mix, and garnish with toasted sesame seeds. Your delicious stir-fried zucchini with fermented shrimp is now ready!
