Ingredients- 2 handfuls Wood Ear Mushrooms
- 1/2 handful Mixed Nuts
- 4 Olives
- 2 Abalone
Seasoning- 0.5 tsp Soy Sauce
- 0.2 tsp Salt
- 3 tsp Perilla Oil (Deulgireum)
- 0.5 tsp Soy Sauce
- 0.2 tsp Salt
- 3 tsp Perilla Oil (Deulgireum)
Cooking Instructions
Step 1
Rinse the 2 handfuls of wood ear mushrooms thoroughly under cold water and trim them into bite-sized pieces. Aim for pieces about 2-3 cm in size for a pleasant texture.
Step 2
Clean the 2 abalones, remove the meat from the shells, and discard the innards. Slice the abalone meat into bite-sized pieces, approximately 1cm square. Making shallow cuts on the abalone can help it absorb flavors better.
Step 3
Finely mince the 4 olives. These will add a wonderful burst of flavor and texture to the dish.
Step 4
Heat 2 tsp of perilla oil in a pan over medium heat. Add the sliced abalone and stir-fry for about 1-2 minutes, until it turns opaque and slightly firm. You’ll notice a nutty aroma.
Step 5
Once the abalone is partially cooked, add the prepared wood ear mushrooms and the remaining 1 tsp of perilla oil to the pan. To prevent splattering, reduce the heat to low and carefully stir-fry, perhaps with a lid slightly ajar. Cook for about 2-3 minutes until the mushrooms soften. Be cautious as hot mushrooms can pop!
Step 6
When the wood ear mushrooms are tender, add 0.5 tsp of soy sauce and 0.2 tsp of salt. Stir well to ensure all ingredients are evenly coated. Taste and adjust seasoning with a tiny bit more salt if needed.
Step 7
Finally, add the 1/2 handful of mixed nuts and stir-fry for another minute until they are lightly toasted and fragrant. This will enhance the nutty notes of the dish.
Step 8
Serve the delicious stir-fried wood ear mushrooms on a plate. Enjoy them warm for the best flavor. This dish is a perfect accompaniment to wine or tea.
