Sweet Potato Stem Stir-fry Ingredients

  • 1.5 handfuls of sweet potato stems (approx. 200g)
  • A little green onion, finely chopped
  • 1 tsp minced garlic
  • A pinch of salt (for blanching)

Seasoning Ingredients

  • 1.5 Tbsp perilla oil
  • 1/2 tsp sugar
  • 1 Tbsp fresh perilla powder (heaping)
  • 1 tsp salt (for seasoning)

Preparing the Sweet Potato Stems: Starting from the leafy end, gently break the stems and peel off the tough outer skin. Removing the fibrous peel is key to achieving a tender texture.

After the initial peeling, bring a generous amount of water to a boil in a pot. Once boiling, add a pinch of salt and the prepared sweet potato stems. Blanch them for about 1 minute. Be careful not to overcook them, as they can become too soft.

Immediately rinse the blanched sweet potato stems under cold running water to stop the cooking process and maintain their crispness. After rinsing, carefully peel off any remaining tough skin. (Alternatively, you can remove the leaves first, blanch, and then peel the stems.)

While peeling, it’s convenient to cut the stems into bite-sized pieces, about 5-7 cm long.

Heat a wok or frying pan over medium heat, then add the prepared sweet potato stems and stir-fry. Once they begin to soften slightly, add the minced garlic, chopped green onion, and 1 tablespoon of perilla oil. Stir-fry vigorously over high heat. Season with sugar and salt to taste.
