Main Ingredients

  • 400g Squid (4 bullet squids or slightly more than 1 regular squid)
  • 1/2 Onion
  • 1/2 Red Bell Pepper (or paprika, carrot)
  • 4 stalks Chives (optional)

Soy Sauce Glaze

  • 1 Tbsp Minced Garlic
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Oyster Sauce
  • 1 Tbsp Sesame Oil
  • 1/2 Tbsp Sugar
  • 1 Tbsp Minced Scallions
  • 1/2 Tbsp Toasted Sesame Seeds

For Stir-frying

  • 4 Tbsp Cooking Oil

Cooking Instructions

Prepare the fresh squid. If using bullet squid, clean and prepare 4 pieces (or about 1 large regular squid). Remove the innards and trim any unwanted parts. Slice the squid into bite-sized rings.

Prepare the vegetables. Wash and thinly slice half an onion and half a red bell pepper (seeds removed). Red bell peppers add a vibrant color, but you can substitute with other colorful options like paprika or carrot. Wash and cut 4 stalks of chives into 4-5cm lengths. (Chives add flavor and a slight crunch, but can be omitted).

Heat oil in a pan and sauté aromatics. Heat 4 tablespoons of cooking oil in a skillet over medium heat. Add 1 tablespoon of minced garlic and 1 tablespoon of minced scallions, and stir-fry for about 20 seconds until fragrant. Once the garlic and scallions are aromatic, add the sliced onion and sauté until translucent.

Add squid and bell pepper, then stir-fry with the sauce. When the onion is partially cooked and translucent, add the prepared squid and red bell pepper. Pour in 2 tablespoons of soy sauce, 1/2 tablespoon of sugar, and 1 tablespoon of oyster sauce. Stir-fry until all ingredients are well combined and the squid is cooked.

Finish with aromatic seasonings. Once the squid is cooked through to your liking, add the chopped chives and quickly toss to combine. Turn off the heat, then drizzle in 1 tablespoon of sesame oil and sprinkle with 1/2 tablespoon of toasted sesame seeds for a wonderfully fragrant and savory finish.
