Main Ingredients- 1/2 Korean radish (approx. 500g)
- 1/2 stalk green onion
Cooking Instructions
Step 1
First, wash and prepare the radish for the dish. Half a radish should be a generous portion. Prepare about half a stalk of green onion and chop it finely.
Step 2
Julienne the prepared radish into thin strips, about 0.3cm thick. Cutting the strips uniformly will help them cook evenly.
Step 3
Finely chop the prepared green onion. This will help it blend well with the radish later.
Step 4
Heat a pan and add 2 tablespoons of perilla oil to bring out its nutty fragrance. If you don’t have perilla oil, sesame oil can be used, but the unique aroma of perilla oil pairs exceptionally well with radish dishes.
Step 5
Add all the julienned radish to the pan. Since radish releases moisture, it’s best to stir-fry over medium-low heat rather than high heat initially.
Step 6
Stir-fry the radish in the perilla oil for about 3 minutes, allowing it to get coated. During this process, the radish will soften slightly and its natural sweetness will be enhanced.
Step 7
Once the radish is slightly tender, add 1/2 tablespoon of fine salt to season and stir-fry together. Adding salt too early can draw out excess moisture from the radish due to osmosis, so it’s better to add it after stir-frying with perilla oil.
Step 8
Now, pour 1 cup (200ml) of water into the pan. This water will help to tenderize the radish.
Step 9
Cover the pan with a lid and simmer over medium heat for about 5 minutes. The radish is cooking well when it becomes translucent and a pleasant aroma fills the air.
Step 10
When the radish is cooked to your liking, add 1/2 tablespoon of minced garlic to enhance the flavor. If you prefer a milder garlic flavor, you can reduce the amount or omit it.
Step 11
Finally, add the chopped green onions and gently toss to combine all the ingredients. The fragrant green onions will complete your delicious stir-fried radish dish!
Step 12
Serve the finished stir-fried radish generously in a beautiful bowl. Enjoying it warm right after cooking brings out the best of the perilla oil aroma and the radish’s sweetness. It’s a perfect side dish for rice!
