Stir-Fried Radish Greens (Munamul Bokkeum)
Crispy Seasonal Radish Greens Stir-Fry! A Delicious Side Dish
It’s said that eating autumn radish is as beneficial as taking tonics! Radish is also known as a natural digestive aid and comes in various varieties throughout the year, making it a versatile ingredient. Today, I’m sharing a recipe for ‘Munamul Bokkeum’ using this affordable and delicious seasonal radish. The combination of its crisp texture and savory perilla seed powder will make it an indispensable side dish on your dining table.
Ingredients
- 1 medium radish
- 1/2 Tbsp salt
- 2 Tbsp perilla seed powder
- 3 Tbsp perilla oil
- 1/2 Tbsp minced garlic
- A little green onion
Cooking Instructions
Step 1
First, prepare a fresh radish. Wash the radish thoroughly and julienne it into pieces about 0.3 cm thick. Slicing them not too thinly will help maintain a crispy texture after stir-frying, making them even more delicious.
Step 2
Heat a frying pan over medium-high heat and add 3 tablespoons of perilla oil. Add all the julienned radish. Radishes contain a lot of water and can easily become mushy, so it’s crucial to stir-fry them quickly over high heat to evaporate some of the moisture. Stir-fry carefully to prevent burning.
Step 3
Once the radish starts to wilt slightly, add 1/2 tablespoon of salt and stir-fry quickly. This step helps the salt draw out more moisture and season the radish. Continue stir-frying over high heat to keep it crisp.
Step 4
When the radish is almost fully cooked, add 1/2 tablespoon of minced garlic and stir-fry together to infuse the flavor of garlic. Adding garlic too early can cause it to burn, so it’s best to add it in the final stages.
Step 5
Finally, add 2 tablespoons of perilla seed powder for a nutty aroma. You can adjust the amount of perilla seed powder to your preference. Taste and add a little more salt if needed to achieve your desired seasoning.
Step 6
Once the Munamul Bokkeum is fully cooked, turn off the heat. Add a small amount of thinly sliced green onion and mix well. The fresh aroma of the green onion will make your radish stir-fry even more delightful.
