  • 1/4 head of well-fermented Napa cabbage kimchi, cut into bite-sized pieces
  • 500g pork shoulder, cut into bite-sized pieces

Seasoning Ingredients

  • 1 Tbsp minced garlic
  • 2 Tbsp gochugaru (Korean chili powder)
  • 3 Tbsp sugar
  • 1.5 Tbsp soup soy sauce (guk-ganjang)
  • Pinch of black pepper
  • 2-3 Tbsp cooking oil (e.g., sunflower oil)
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

First, rinse any excess brine from the well-fermented Napa cabbage kimchi and cut it into roughly 2-3cm pieces for easy eating. Also, cut the pork shoulder into similar bite-sized pieces according to your preference. (Using thinly sliced pork shoulder can shorten the cooking time, making it more convenient.)

In a pan where you’ll be stir-frying the kimchi and pork, add 1 Tbsp minced garlic, 2 Tbsp gochugaru, 3 Tbsp sugar, and a pinch of black pepper. The amount of sugar can be adjusted based on the sourness of your kimchi.

Heat the pan over high heat, then add the cut kimchi and pork shoulder. Stir-fry quickly, ensuring all ingredients are evenly mixed, until the pork shoulder is fully cooked and the kimchi is tender, about 5-7 minutes. Stir frequently to prevent sticking. Finally, add 1.5 Tbsp of soup soy sauce to season. If it’s not salty enough, you can add a little salt.
