Stir-fried Pollock Roe and Potato Noodles: Perfect as a Beer Snack, Side Dish, or for Kids!
Even low-sodium pollack roe can sometimes taste too salty. This recipe introduces a delightful way to enjoy both pollack roe and vegetables by stir-frying them together. It’s a fantastic side dish for rice and pairs exceptionally well with beer! You can savor a generous amount of pollack roe and vegetables in this delicious dish.
Main Ingredients- 1 medium potato
- 1/2 medium onion
- 3 stalks garlic scapes (optional)
Seasoning & Others- 1 pollock roe
- 1 Tbsp sesame seeds
- Pinch of black pepper

Cooking Instructions
Step 1
First, peel the skin off the medium potato and half of the medium onion.
Step 2
Cut the potato into thick matchsticks (julienne). Soak the julienned potatoes in cold water for about 10 minutes to remove excess starch. This step ensures a better texture and prevents them from sticking together when stir-fried.
Step 3
After 10 minutes, drain the potatoes thoroughly in a colander. It’s important to remove as much water as possible to prevent oil splattering during cooking and to achieve a crisper result.
Step 4
Julienne the onion similarly to the potato. Cut the garlic scapes into 4cm lengths. For the pollack roe, carefully remove the thin membrane and extract only the roe. (If you choose to omit the garlic scapes, reduce the amount of pollack roe to about 2/3 of a single piece to maintain a balanced flavor.)
Step 5
Heat a generous amount of cooking oil in a pan over medium-low heat. Add the drained potato matchsticks and stir-fry. Cook until the potatoes become slightly translucent and tender, but not fully cooked through. Avoid high heat initially, as it can burn the outside while leaving the inside undercooked.
Step 6
When the potatoes are about halfway cooked and still have a slight crunch, add the julienned onion and the cut garlic scapes to the pan. Increase the heat slightly to medium and continue stir-frying until the vegetables are softened and lightly browned.
Step 7
Once the vegetables are lightly golden and tender, add the prepared pollack roe. Stir-fry quickly for about 30 seconds, just enough to coat everything evenly. Overcooking the pollack roe can make it dry and tough, so be brief.
Step 8
Finally, sprinkle in the sesame seeds and black pepper. Give it one last quick stir to combine everything. Your delicious Stir-fried Pollock Roe and Potato Noodles are ready! For an extra layer of flavor, you can add a drizzle of sesame oil at the end.
