Ingredients- 3 handfuls perilla greens (approx. 150g)
- 1/2 red chili pepper
- 1 tsp salt (for blanching)
Seasoning- 3 Tbsp perilla oil (deulgireum)
- 1/2 Tbsp minced garlic
- 1 Tbsp soup soy sauce (guk-ganjang)
- 1 Tbsp toasted sesame seeds

Cooking Instructions
Step 1
Wash 3 handfuls of perilla greens thoroughly under running water. It’s important to wash them carefully to remove any dirt or debris. Place the washed perilla greens on a colander to let them drain naturally. Avoid draining for too long, as they might wilt.
Step 2
In a deep pot, bring 2 liters of water to a boil and add 1 teaspoon of salt. Adding a little salt while blanching helps to maintain the vibrant green color of the perilla greens and reduces their slightly bitter taste.
Step 3
Once the water is boiling vigorously, add the drained perilla greens and gently stir them with chopsticks. Blanch them just until they wilt slightly; overcooking can make them mushy. Blanch for about 30 seconds to 1 minute.

Immediately rinse the blanched perilla greens under cold water to cool them down. Rinsing in cold water helps preserve their crisp texture and keeps their color fresh.
