Ingredients

  • 3 handfuls perilla greens (approx. 150g)
  • 1/2 red chili pepper
  • 1 tsp salt (for blanching)

Seasoning

  • 3 Tbsp perilla oil (deulgireum)
  • 1/2 Tbsp minced garlic
  • 1 Tbsp soup soy sauce (guk-ganjang)
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

Wash 3 handfuls of perilla greens thoroughly under running water. It’s important to wash them carefully to remove any dirt or debris. Place the washed perilla greens on a colander to let them drain naturally. Avoid draining for too long, as they might wilt.

Step 1

Step 2

In a deep pot, bring 2 liters of water to a boil and add 1 teaspoon of salt. Adding a little salt while blanching helps to maintain the vibrant green color of the perilla greens and reduces their slightly bitter taste.

Step 2

Step 3

Once the water is boiling vigorously, add the drained perilla greens and gently stir them with chopsticks. Blanch them just until they wilt slightly; overcooking can make them mushy. Blanch for about 30 seconds to 1 minute.

Step 3

Step 4

Immediately rinse the blanched perilla greens under cold water to cool them down. Rinsing in cold water helps preserve their crisp texture and keeps their color fresh.

Step 4

Step 5

Take the perilla greens out of the cold water and gather them in your hands, squeezing out as much water as possible. Excess water can make the stir-fry soggy, so squeezing them firmly is a key to a well-finished dish.

Step 5

Step 6

Heat a pan over medium heat and add 3 tablespoons of perilla oil. The nutty and fragrant aroma of perilla oil will beautifully complement the perilla greens, creating a delicious stir-fry.

Step 6

Step 7

Once the perilla oil is slightly heated, add 1/2 tablespoon of minced garlic and stir-fry them together. When you can smell the garlic aroma rising, it’s time to add the perilla greens.

Step 7

Step 8

Add the well-squeezed perilla greens to the pan. Gently separate them with your spatula or chopsticks so they don’t clump together. Ensuring they are separated will help them cook evenly.

Step 8

Step 9

Thinly slice 1/2 red chili pepper (seeds removed) and add it to the pan with the perilla greens. The chili pepper adds a touch of color and a mild spiciness that balances the richness.

Step 9

Step 10

Add 1 tablespoon of soup soy sauce (guk-ganjang) to season. Soup soy sauce enhances the savory flavor characteristic of Korean side dishes. Taste and adjust with more soy sauce or salt if needed.

Step 10

Step 11

Finally, sprinkle generously with 1 tablespoon of toasted sesame seeds for added nuttiness and aroma. Gently mix everything and stir-fry briefly until well combined. Your delicious stir-fried perilla greens are ready!
